140 years of history
Yes, the history of the Garash cake dates back exactly 140 years. The sweet temptation was created in Ruse in the 19th century by the confectioner Kosta Garash, a tenant of the Islyah Hane hotel in the city, in the period 1885-1889.
As the manager of this hotel, which since 1864 has been created according to the Western model, furnished with furniture from Vienna and offering a menu to its guests, Kosta Garash received and fed many foreigners, including crowned heads from all over Europe. At the end of the century, the Serbian, Romanian and Swedish kings visited Ruse.
Among the hotel’s guests was the Bulgarian prince Ferdinand I. The princely palace is located right next to the hotel, and these aristocratic meetings led to the invention of a new dessert, namely – Garash cake. The most valuable evidence in the archive is a Protocol from the municipal council in Ruse from 1885, which certifies the lease of the hotel “Islyakh Hane” to Kosta Garash.
The cake is a culinary sign of the era in which Ruse residents for the first time in Bulgaria drank beer, watched movies or rode the train. The recipe for the “Garash” cake is still kept in old Ruse notebooks and is offered on the menu of every pastry shop, and the cake distinguishes every Ruse table with finesse and elegance.
